You’ve heard of fall of the bone tender. Well, this is fall out of the skin sweet potatoes. It occurred to me while I performed this shortcut I’ve never shared it. Thus another pot was going the next day to show you how this is truly the world’s easiest way to peel a sweet potato.
Step 1: Wash and cut the potatoes in half or thirds if they are long fat ones.
Step 2: Bring them to a boil on high heat and reduce to a medium high heat. A wooden spoon placed over the edge will keep the water from boiling over
Step 3: Drain the potatoes in a colander and allow to cool to the touch (about fifteen to thirty minutes depending how many you are preparing).
Step 4: Slide the potato out of the skin right into a serving bowl. Or you can mash the sweet potatoes with a mixer and allow to cool completely. Bag in labeled quart size bags for future use. Have you tried substituting mashed sweet potato for pumpkin in muffins?
Serving Suggestions:
- Eat hot mashed potatoes with butter, cinnamon and brown sugar
- Sprinkle smashed potatoes with mini marshmalllows and broil until lightly toasted.
- Freeze in quart size bags just like butternut for future use. Add to sneaky soups, chili and marinara sauces.
- Puree in food processor with a few tablespoons water and freeze in ice cube trays for baby or toddler food. Freeze and move cubes to a quart size freezer bag with air vacuumed out.
Thanks so much for the tips! I love sweet potatoes!
How long do you cook them once you turn down the heat?
Jennifer, I just test them with a fork for tenderness after 40 minutes or so. You’ll start to see the peel start to separate from the flesh.
