Weekly Menu 5/9-5/15

Nearly every meal I prepare consists of foods I have cooked or baked in bulk and frozen. I thaw items in a plastic shoe box to prevent condensation dripping onto my shelves (I’ve learned from experience). I shop my freezer from my freezer inventory,  to see what goodies I can thaw and serve to my family. I write these items down on a seven-day menu plan and post it on my refrigerator as a reminder to thaw my food 24 hours ahead of time. Typically right after the dishes are done, I check my menu plan and put new items into my thawing box and slash them off my freezer inventory. Here’s what I’m thawing this week…

It’s a little slim with little or no extra freezer cooking because I’m getting away for a writer’s conference. It’s local so I’ll commute and make dinner a few nights when I’m able. I’m leaving some easy meals for hubbie to make on nights I’m gone. He’ll probably take the kids out for dinner one night and we’re planning a date one night so this is just a plan in place.
We had a terrific time at the Cherokee KOA. They are having buy one get one free night this upcoming weekend again. You might want to check it out if you like camping. They have cabins, too. My children enjoyed the bouncy trampoline and the indoor pool and jacuzzi. It was just an hour and a half away from Asheville, NC.
