Nearly every meal I prepare consists of foods I have cooked or baked in bulk and frozen. I thaw items in a plastic shoe box to prevent condensation dripping onto my shelves (I’ve learned from experience). I shop my freezer from my freezer inventory, to see what goodies I can thaw and serve to my family. I write these items down on a seven-day menu plan and post it on my refrigerator as a reminder to thaw my food 24 hours ahead of time. Typically right after the dishes are done, I check my menu plan and put new items into my thawing box and slash them off my freezer inventory. Here’s what I’m thawing this week…
Hubby and kids are on spring break so I’m thawing extra items this week. Our plan is to camp at least two to three days, so I’ll show you how easy these meals come together in our little camper. Pictures coming soon.
- Turkey Burgers, zuchinni and onions, pasta salad made with frozen pasta
- Grilled Italian Chicken (make extra for convenience chicken),greek salad, naan
- Grilled Pizza with naan, salad
- Parmesan Chicken, macaroni and cheese made with frozen penne pasta, frozen green beans
- Hebrew National Hotdogs, peppers and onions, tortilla chips, pico de gallo
- Asian Chicken Kabobs with zuchinni, peppers and onions, brown rice cooked with frozen chicken broth
- Breakfast for Dinner-local sausage, grits, fried eggs and sour cream biscuits
- Southwest Steak, twice baked potatoes, salad
- Homemade granola bars, Olive oil pound cake (didn’t get to make this last week), homemade granola

Yes, I receive their emails. I cook in large quantities when I’m doing it already and then I have four to five batches for other meals. It’s so helpful with four children. Thanks for stopping by.
