Weekly Freezer Cooking Menu {Prepping for Work}

I started my new full time teaching job on Thursday and Friday. I am so thankful to have had two days to ease my way back in the saddle. I’m definitely prepping my meals on the weekend and making sure we have a plan in place unlike my flu week. The two boys start baseball and my oldest daughter starts her soccer games. Game nights are crock pot nights so there is no cooking when we get home. I have a few items on my weekend power cooking sessing to keep us afloat during the week with no stress. I’m sure I’ll tweak it as we go, but overall I feel good about working and still having healthy wholesome meals.

So many of you blessed me with your kind words when I made my annoucement back to work. I just want to take time to thank you for reading my blog, supporting our family with your kind words and prayers. I didn’t read them until the Thursday morning I returned to teaching and it made my day. I am so blessed to blog and share with all of you. Thank you! Our meal plan:

  • No Boil Cheesy Lasagna{prepping on the weekend}, salad, asparagus
  • Southwest Freezer wraps {I put these on the panini press} leftover salad, carrot sticks for kids, tortilla chips
  • Salmon Patties, sweet potatoes {from the freezer}, asparagus
  • Crock Pot Potato Soup, sandwiches
  • Breakfast for dinner: chocolate chip freezer waffles, scrambled eggs, turkey bacon, fruit
  • Food Processor Pizza Crust for Spinach Artichoke Pizza, pepperoni and cheese for kids, salad/carrots
  • Crock pot Veggie chili {from the freezer}, chips and cheese, leftover salad

Weekend Freezer Cooking {I may break this into two 1-hour sessions or just knock it out depending how I feel and my time}: Cheesy Lasagna (2-8×8 pans), potato soup kit, freezer waffles, food processer crust {freeze}, world’s easiest boiled eggs, Steel Cut Oatmeal, no bake energy bites {freeze for lunch boxes}, carrot sticks
