Our camping menu was almost a wash out due to the rain last week. My two girls and I came home a day earlier so we weren’t stuck in the camper for twenty-four hours. Thankfully, we were only forty-five minutes away and my husband was happy to drive us home. We did have one sunny day out of four and managed to squeeze in a smore or two from the make ahead smore box. Here’s another camping menu we made at Cascade Lake last year.
This week looks a little drier in our town. How about yours?

- Spicy Shrimp kabobs over quinoa, salad with Sweet Asian dressing {recipe coming this week}
- Spicy Steak Fajitas {using freezer cajun seasoning) inside homemade tortillas
- Greek pasta salad, feta basil burgers
- White pizza {using shoe box dough} with tomato and freezer pesto
- Crock pot bacon and cheese potatoes, salad
- chicken wraps, chips and fruit, {monthly mission meal}
- bacon vegetable quiche, freezer pancakes {pancake mix recipe coming this week} and eggs for kids, fruit
