Nearly every meal I prepare consists of foods I have cooked or baked in bulk and frozen. I thaw items in a plastic shoe box to prevent condensation dripping onto my shelves (I’ve learned from experience). Then I shop my freezer from my freezer inventory,  to see what goodies I can thaw and serve to my family and others. I write these items down on a seven-day menu plan and post it on my refrigerator as a reminder to thaw my food 24 hours ahead of time. Typically right after the dishes are done, I check my menu plan and put new items into my thawing box and slash them off my freezer inventory.

We rotate the same breakfast items each week:

We rotate leftovers, sandwiches, salads and wraps for lunch.

  • Crock pot Honey Sesame Chicken {new recipe this week} over whole wheat noodles, salad with Asian dressing
  • Pan fried talipia, red potatoes, fresh green beans, corn on the cob
  • Beef with broccoli, brown rice, corn on the cob
  • Potato Kielbasa, scrambled eggs, homemade English muffins
  • Crock pot chicken, broccoli and brown rice, salad
  • Pizza muffins and mini-pizza muffins, salad
  • leftovers

I make certain staples every Friday or weekend. Here is my usual list: microwave prep granola, chocolate chip granola bars, world’s easiest boiled eggs. I made homemade English muffins this week which might end up being a staple each week or every other week if I double the recipe.

Other items, such as pizza muffins or freezer waffles I make as needed when we run out. Some crock pot meals I prep during our bi-monthly freezer cooking class. Finally, I have those quick meals {15 minutes}, which I can cook on a day I’m not running errands, etc. If I am running errands, I’ll often make items, like pizza muffins ahead of time around 1:00 p.m. while the kiddos are playing peacefully and reheat them for dinner. This way I don’t have a toddler wrapping her legs around me when I’m trying to bake. Anyone else have that problem?
