What’s a family of six to do with so much time because the meals are prepared in advance? For starters we wake up at 6:00 a.m. (mom at 4 to pack the cooler and last minute items) to hit the road. We head out the door with bacon lover wraps for breakfast. Of course, they were made the night before when we had breakfast for dinner. Bacon lovers wraps=6 wraps, 8 eggs, 1 1/2 cups cheese and 12 pieces of turkey bacon.
We had no definite agenda except to have a lot of water fun:
Waterfront Park in Downtown Charleston.
Our kayak we hauled on top of the vehicle. We’re just posing for the picture having fun on the shore. My husband actually took it into the waves! He caught several trout and a big flounder we grilled for dinner one night.

And we had a lot of good eats (previously planned and ready to eat within 30 minutes):
I quickly made pizza bagel bites for the kiddos to snack on throughout the week. They went from freezer to toaster oven to hungry tummies within 15 minutes. I used whole wheat mini bagels, my speedy pizza sauce, cheese and pepperoni slices cut into fourths with kitchen shears.
Spinach salad with our local goat cheese and leftover Artisan bread croutons (toasted cubes with butter and garlic salt)
Ranch cheddar burgers grilled to yummy perfection. The patties were thawed in the plastic shoe box ready to grill when we got home.
I made a double run of my kid’s favorite snack mix: Cheddar Bunny Snack Mix. I took along two gallon size bags of this seasoned snack and every last morsel was eaten.
