- 1 large eggplant
- 2 cups baby carrots, sliced on a diagonal
- 2 large onions, cut
- 1 extra large zucchini (you know the kind you might throw away because it got enormous in the garden)
- 3-4 small squash
- 2 peppers, sliced
- 1 bunch green onions
I stir-fry this the same way I prepare my zucchini and onion recipe here.
