No-Bake Hazelnut Chocolate Cookie Bars

My family devoured this recipe over the weekend like it were fudge. Everyone except me, adores homemade fudge. I can eat it ever so sparingly, because it’s way too rich for my taste buds. However, this recipe was just right with the serving size and chocolate flavor. I reduced the sugar slightly from Lynn’s original recipe and tried hazelnut spread, my daughter’s absolute favorite. Now this is her favorite dessert. Her cousin thought the oats were nuts which was a bonus :)

Enjoy a lighter tasting fudge or no bake cookie.

No Bake Hazelnut Chocolate Cookie Bars

adapted from Lynn’s Kitchen Adventures

  • 2 cups sugar {I used 1 1/2 cups}
  • 1 cup butter (2 sticks)
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oats
  • ⅔ cup nutella or hazelnut spread {peanut butter works too}
  • 1 cup chocolate chips

  1. Bring first four ingredients to a boil and cook 1 minute.
  2. Add vanilla, oatmeal, and nut spread and stir until well combined. Then stir in chocolate chips.
  3. Spread into a jelly roll/bar pan. Refrigerate until firm. Cut into squares using a metal spatula. Store in the refrigerator during humid weather.
