Crock pot Chicken, brown rice with broccoli
The women and children loved this month’s mission meal. We made chicken, broccoli, rice casserole. It is actually a crock pot recipe I’ve posted here and I converted it into an oven recipe because I wanted to make four casseroles. Well, you can imagine I don’t own four crock pots. In fact, I only own one. In the oven went the chicken and broth with onion for a couple of hours. Then I added the rest of the ingredients except the sour cream and cheese. I waited the last hour to stir it in and cooked the meal until the rice was fully cooked. I found some extra bread crumbs and cheese at the shelter and sprinkled it on top.
The ladies went crazy over this meal and it was so easy to make homemade. I’m so grateful to be able to give them a nourishing meal without the additives and preservatives. I had several women ask for cooking lessons. I plan to share some freezer skills with them during the summer when the vegetable bounty is in. I hate to see lots of vegetables rotting in their kitchen when I get there.
My friend made a delicious fresh salad and we had whole wheat rolls. It was a warm satisfying meal on a cold day.
