Make Ahead Energy Bites {freezer friendly}

Who needs energy around four to five o’clock, just an hour or two before dinner? Two or three of these bites and a cup of herbal tea are the perfect amount of energy to fuel me until dinner at 6.

My kiddos love these as well and I will pack one as a dessert for my 3 year old toddler in her lunch box. My oldest daughter grabs two to three when she gets home from soccer practice until dinner is ready. And the boys might sneak one or two after dinner.

I make this version or the protein power bites version. Lately, I’ve been keeping a batch of these on hand in the refrigerator. I’ve also stored a batch in the freezer and placed them directly in the lunchbox to thaw. We like them both ways, frozen in the hotter months and refrigerated in the cooler ones.

Be sure to try them both ways. I’ve tweaked this recipe from $5 dollar dinners, but Erin suggests using gluten free rice krispies or oats for those intolerant.


  • 1-1/2 cups old-fashioned oats {quick work too}
  • 2/3 cup peanut butter {I use natural}
  • 1/3 cup honey {I use agave}
  • 1 cup shredded unsweetened coconut flakes
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup mini chocolate chips


  1. Combine the oats, peanut butter, honey or agave, coconut flakes and cinnamon and stirring well until combined.
  2. Fold in the chocolate chips.
  3. Chill in the fridge for about an hour. Form into balls. I use a cookie scoop and press into my wet hand to quickly form balls.



IMG_7002I store them in a plastic container with a piece of parchment paper {wax or foil works too} between the levels of bites.

One batch lasts us about five to six days as sweet treat or energizing snack. I even pack two with my work salad as a treat :)
