How about making a Rudolph cookie with your little ones this Christmas season? Here’s a healthier version of our favorite reindeer cookie made with peanut butter and white whole wheat flour. It’s a frugal recipe with ingredients you probably have on hand. I use chocolate chips for the eyes and grabbed a red candy for the nose. Ideally, a red M & M or skittle would be a more appropriate size, but I use what I have

Ingredients
- 2 sticks of butter, softened
- 2 eggs
- 1 cup sugar ( I like raw)
- 1 cup firmly packed brown sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 3 cups white whole wheat flour (I like King Arthur
- 3/4 cup natural peanut butter
- 2 tsp. vanilla
- mini pretzels, chocolate chips and red candy for decorating
Instructions
- Cream butter, sugar, peanut butter, eggs and vanilla.
- Add dry ingredients and mix until there are no dry patches.
- Using a cookie scoop, place 2 scoops for each cookie on a cookie pan or stone. Lightly flour hands and shape into a triangle facing down.
- Place two mini pretzels for the ears, two chocolate chips for the eyes and a red candy for the nose.
- Place about eight to ten cookies per pan.
- Bake at 375 for 10-12 minutes.
- Cool one minute and remove from baking sheet and cool on wire racks.
