Healthier Lemon Pie Bars {freezer friendly}


Go make these right  now if you love lemon. I have three tips for you when making these: use a microplane grater to get fine lemon zest, use real lemon juice from two large lemons, using a reamer if you have one.  Finally,  make two pans if you looove lemon. This is a fresh way to introduce spring.

  • 2  1/4 cups white whole wheat flour
  • 1/2 cup confectioner’s sugar
  • 1 cup butter, {2 sticks} soften at room temperature or microwaved for 30 seconds at 30% power
  • 4 eggs
  • 1 1/4 cup white sugar
  • 1/2 cup real lemon juice {freshly squeezed from two large lemons}
  • lemon zest from one large lemon
  • confectioner’s sugar for dusting


  1. Preheat oven to 350 degrees F
  2. Mix 2 cups of flour and confectioner’s sugar together. Cut in the butter or margarine with mixing paddle. Mix well until the dough resembles pie dough consistency. Press the dough into a 9×13 inch baking pan with a measuring cup sprayed with cooking spray.
  3. Bake 20 minutes or until golden brown.
  4. Beat together eggs, sugar, 4 tablespoons flour, lemon juice and lemon rind for at least 1 minute. Pour the mixture over the baked crust.
  5. Bake the bars another 20 minutes, or until the lemon topping has set. Sprinkle with confectioner’s sugar when cooled.
