This week my three-year-old left the nest and went to preschool three days a week. It’s been quite busy around my house with many Freezer Fairy projects and easy meals waiting in my thawing box. Most days we eat at 5:30 right before my oldest daughter heads to another practice. Other days, when my oldest son has ball practice we’ll eat around 7:30 which is definitely a crock pot night. I like to prep my meals early while my preschooler naps or plays and have it ready to go at dinner. I go ahead and make a large salad that will last several days. Or I’ll prep my 5-minute shoe box dough early in the am for the next day.
Dinner this week:
- Crock pot Taco bowls using freezer black beans and brown rice, salad {how to freeze black beans and rice}
- Crock pot Chicken Lasagna using Freezer Italian Chicken and crock pot marinara
- BBQ chicken calzones using frozen BBQ pulled chicken and shoe box dough
- Nachos Grande with easy cheese sauce and freezer crock pot taco meat with black beans and corn, avocado {how to freeze avocado}
- Breakfast for dinner: healthier biscuits, crock pot apple butter, fried eggs, fresh fruit {Mission Meal Night}
- Shredded Beef and Bean Enchildas using leftover freezer Italian Beef and freezer enchilada sauce
- Three Pizza Pie Kit with speedy sauce, salad
- Freezer snacks: Chocolate zucchini bread from the freezer and chewy chocolate chip granola bars
