Hello, Freezer Friends,
We had a fun family Friday at a picnic, fishing and blueberry picking. Our family picked a gallon for $10 right near our house and I’ve already frozen half. I’m making some items this week with blueberries and sweet potatoes. Our ministry received about six bushels of sweet potatoes. I’ve already got about 15# baking as I’m posting and many more to deal with. I’m excited to have extra for our local mission meal for the homeless in September. A friend donated a whole spiral honey ham as well so I’m planning honey ham biscuits and sweet potatoes, perfect for the cooler weather. God is so good to provide for the homeless.
My weekend power session includes the baked potatoes, blueberry compote, sweet potato waffles and Starbucks blueberry muffins. I also made a double batch of cookie dough balls and banana crumb muffins for upcoming school days. I’m so pumped about having healthy snacks and food in the freezer for all four kiddos. I’ll be posting lots of ideas coming soon.
My youngest is picking her own fruit for future blueberries muffins, waffles and compote and she doesn’t even know know it
Dinner this week:
- Sweet Potato Kielbasa with peppers and onions, spinach salad with sweet Asian dressing
- Crock pot Beef Stronganoff {Carried over from last week} over brown rice {how to freeze brown rice} and frozen asparagus
- Italian Meatballs and Spaghetti with Crock Pot Marinara, salad
- Crock Pot Philly Steak Subs, corn on the cob
- Healthier Mac and Cheese with turkey hotdogs, salad with Sweet Asian dressing
- Breakfast for dinner: sweet potato waffles with leftover sweet potatoes with blueberry compote, fried eggs, fruit, turkey bacon
- Quicker sweet potatoes, tuna salad sandwiches with tomato
