My camping neighbor reminded me last week of our newly acquired Dutch ovens we bought second hand last summer. I’m determined to start using it and try out some new recipes this camping trip, so here we go. I pinned several on my “Let’s Go Camping” Pinterest Board. I’ll do a follow-up next week to let you know how they turned out using my whole food ingredients.
Camping Menu:
- Steak Fajitas on homemade tortillas and pico de gallo, cheesy black beans {carried over from last week}
- Dutch oven monkey bread using shoe box dough {line with foil}, fresh fruit, turkey bacon, fried eggs
- Dutch Oven Cheesy Potatoes, pig in a blanket on a stick {shoe box dough}
- chewy chocolate chip granola bars, granola cereal with blueberries
- Grilled Pizza using shoe box dough, salad
- Campfire Cones {new treat for kiddos}
- Garlic Shrimp Scampi with potatoes/onions in foil, salad
- Breakfast freezer wraps, fresh fruit, banana blueberry bread
- Homemade Pimento Cheese Sandwiches, vege chips, carrot sticks
Rest of the week:
- Crock Pot Cheese Ziti, salad
- Grilled Carrot fries, southwest taco burgers, tortilla chips and pico de gallo
We’re hoping for better weather than our last camping trip, although I did have plenty of time floating on the lake, thanks to freezer cooking.
Do you freezer cook for your camping trips?
IF your camping with a Dutch oven you’ve got to have pinto beans… In my opinion this is when pinto beans taste their BEST! (Being a Yankee I had to acquire a taste for pinto beans to begin with
Dutch oven + a pound of pinto beans covered in water- cook overnight on the side of the camp fire. Check them every once in a while to see if you need to add more water. Serve for the evening meal the next day- in a coffee cup so you can eat/drink the juice too. We also top with diced raw onions, and have a side of cornbread cooked in a cast iron skillet over the fire.
