Crock pot meals have been my go to on baseball nights. Some of us are getting home at 5:30 while others don’t get home until 7:30. Tonight’s meal involved no meat, but lots of protein from the crock pot black beans slow cooked back in at the end of August. They were frozen, thawed and reheated tonight along with a freshly crocked baked potato. Paired with a salad and a side of asparagus made a hearty meal. We even had some leftover apple crisp from our weekend meal. I made two pans when we had friends over on Sunday.
Who says you have to eat unhealthy fast food from the drive-thru on ball game nights? We’re eating fast food at home;)
