This is a holiday recipe I pulled from my archives and made during the New Year’s Eve holiday. We love the healthy component, spinach. I love the ease of throwing everything together in one bowl and pouring it into an 8×8 dish for a beautiful, delicious appetizer or side dish to virtually any soup. We served ours with Southwest chili, although I’ve served it with baked potato soup and tortellini soup as well. Why it could be a breakfast quiche if you like.

Doing a little more freezer cooking (or beginning) and implementing a menu plan and freezer inventory and thawing box could save you a lot money and headache this year. I highly recommend it. A habit can become a lifestyle after a few short months. It’s been an 11-year lifestyle for me.
