5 minute tacos-REALLY!

 

It’s always nice to have a quick meal on hand, but this has got to be one of the easiest (besides cereal) if you have done your freezer cooking in advance. Every six weeks or so, I grab a lot of ground chuck when it goes on sale. This month I made 8 bags of taco meat for quick meals. It literally took me four minutes to warm the cooked taco meat (already thawed for 24 hours in the fridge) in the microwave and one minute to warm the soft shells. It took my kids longer to set the table than it did for me to get the food on the table :) As the food was warming, I was prepping the sides and we all sat down and enjoyed our soft tacos.

I’ll use my freezer taco meat for other 5 minute meals this month. Look for nachos grande, hard tacos, taco salad, chili or burritos.

Have you considered making good use of your kitchen time? The next time you buy ground chuck, stock up and make extra taco meat. I always share how I prepare foods, freeze them and thaw them safely to spend less time in the kitchen and more time with my family. It’s a mission of mine.
