Have you heard potatoes are on sale at Ingles in NC for a low price of 2.98 this week? I always snag two bags to make multiple freezer sides. Easter is coming and this is a great time to make mashed potatoes. You can make these ahead and freeze also. You have to re-heat very hot to thicken. You can make them thicker than usual for freezing purposes.

Hashbrowns from cold leftover potatoes
I often bake as many potatoes as I can fit in the oven WHILE I’m baking something else-a casserole, cake or cookies or whatever’s on the menu. Then I cool them and place them in my fridge for hashbrowns within the next 3 to 5 days.
I like to make twice baked potatoes while they’re warm and cool and freeze the skins for a cheesy side dish (see above). This is a real bang for your buck. I’m going to make freezer hashbrown casseroles for the first time. I’ll let you know how they turn out and post the recipe soon.
