Wednesday was my daughter’s fourteenth birthday and I pulled off Super Mom by making cupcakes for her cheer team. I was trying to keep it a surprise so I took the ingredients to school with me and baked them in the morning and frosted them after school. I sure am blessed to work in a kitchen! My first thought was to buy cupcakes for the team, but when I checked them out at our local Ingles and saw the price for a half dozen I changed my mind quickly. I realized it would be $15 for cupcakes that taste store-bought. So I pulled out my secret ingredient cupcake recipe using a cake mix and made them special with her school colors. I ran by Dollar General for a balloon bouquet and dropped off cupcakes during her practice. Then I took her shopping after I ran my two youngest to church. We finally sat down to eat dinner at 8:00!
This weekend was relaxing compared to the birthday party with freezer Mexican lasagna and h0mememade icecream cake last week. I made my usual World’s easiest boiled eggs, baked two dozen banana chocolate chip muffins for the week.
- Salmon Patties, crock pot baked potatoes, salad
- Chicken Fajitas, crock pot black beans, carrots
- Pumpkin Chocolate Chip Pancakes, fried eggs, turkey bacon
- Meatball Subs, sunchips, salad
- Crock pot BBQ chicken sandwiches, sunchips, salad
Did anyone else have a crazy busy week?
