Cascade Lake Camping Trip {5-minute Grilled Thin Crust Pizza}

The peace on a lake surrounded by mountains God created is breathtaking. I’m blessed to relax upon a turtle.

Just call me when it’s 5:00 p.m.

It’s always a pleasure to relax knowing dinner’s either cooking or prepped and ready to go. That’s where my faithful freezer cooking/make ahead meals come in handy. I can rest assured we can have dinner on the picnic table within 30 minute or less. And that makes a huge difference when you’re camping with five hungry kiddos.

We love the Cascade Lake beach area and my kids love riding in the canoe. This is our two-year-old’s first time out and she already wants to control the paddle. Who’s in control here?

Our meals consisted of:

Grilled Thin Crust Pizza using homemade tortillas and speedy pizza sauce (prepped from home) with fresh corn on the cob. It’s prepared exactly like my grilled flat bread pizza. I wanted a thinner, lighter carb version of pizza to try and this was the ticket. It’s not ideal for holding up a ton of veggies, but it’s great for thinly sliced/diced veggies you have on hand. We added a little local dill and garlic chevre cheese to the adult’s pies and yummy was the word.

3 minute pizza prep: Spread pizza sauce on top of a fresh tortilla. Top with your favorite toppings

2 minute cook time: Grill on low until cheese is melted and bottom is lightly toasted.

World’s easiest boiled eggs {bumper car style} and no bake 5-ingredient granola bars (made at home) were super easy for grab and go items for the guys on the kayak and the girls who like to sleep in. I also prepped some quicker cooked yukon gold potatoes for homefries and turkey sausage and thinly sliced red peppers and onions. The peppers were useful for our grilled Hebrew National hot dogs and grilled pizza.

And while we had this much fun, we had potatoes crockin’ outside. Grilled dogs and crocked potato bar (sorry, no picture). Easy peasy.

And for dessert, a little smores with the make ahead smores box.

With very little prep area in the camper and pouring rain outside for a full day, I was thankful for prior planning. And the meals came together in a snap.

  • Bake ahead/Pack Healthy Snacks: Homemade Granola Bars and real peanut butter and whole wheat crackers to take to Dollywood or any outdoor park.

Our family bonding? We definitely have more bonding time since we’re spending less time in the kitchen and more time around the camp fire making family memories.

Freezer Meals Will Travel

CAMPING 101

We enjoy camping summer, spring and fall. My freezer meals have come in so handy for making a true relaxing trip with very little work because most of the prep has been done.

Mother’s Day weekend we camped at Cherokee KOA and the kids had a wonderful time. I just enjoyed watching them do all the fun activities like the bouncy pillow (it was huge), the park, the indoor pool, fishing pond, night candy hunt, movies, bike riding and ice-cream party.

Meal time was so easy when we had delicious, yet healthy meals like Italian Chicken (already marinated for the grill) and garlic naan and Caesar salad, which my hubby loved.

I baked potatoes ahead of time and made hash brown potatoes in a cast iron skillet at the campground.

See all the other freezer items I took on our camping trip here. I’m definitely taking freezer items on our beach trip this summer. I love, love to have marinated meats ready to grill. We stay in a rental house for a week with very little prep space and a small dining area so this will be beneficial.

Marinated meats are great to take on picnics and cookouts. Cooked, frozen pasta (thawed 24 hours) makes it easy to throw a pasta salad together in 5 minutes. Frozen black beans are great to have on hand for black bean and corn salad. Frozen items allow you to have a more relaxing time on a getaway. I’ll be sharing more ideas with you this summer. Camping Food 101

Ten years ago, I was awarded the camping food coordinator for my Sunday School class. I planned two days worth of meals for about fifteen couples. It was a lot of fun and now I have the honor of planning our family camping food for six people. This should be a snap, right?

Well, ten years ago, we DID camp in a tent and we took several outdoor grills for the camping trip. Last year, our family acquired this sweet Jayco trailer with a kitchen and bathroom. It’s such a blessing and we love it. I especially love having cabinets for storage.

We had a pop-up camper the year before and we had to take most everything out before we folded it down. So this is a huge change and our kitchen is much more convenient with counters, fridge/freezer, a microwave, oven, stove, indoor table and outdoor grill. It can get a little tight inside with our family of six, so everyone stays outside while I prep our food.

I like to take as much prepped food as possible. That’s where freezer cooking comes in play. I’ve prepared the following meals and snacks to take along with us. I’ll snap some pictures during our Mother’s Day Weekend and share next week.
