Swiss Chicken {Freezer Meal}

This is one of those simple recipes that you can easily assemble for someone in need and make a pan for your family while you’ve got everything out. It’s freezes so well and taste divine with cranberry sauce. My neighbor first introduced this to our family nine years ago. When I was making a variety of meals for a friend in need, I decided to add this one to the list. And yes, I doubled the recipe and made a pan for both of us. Both casseroles went went straight into the freezer and we enjoyed our meals whenever we wanted.

You can see the layer of melted swiss cheese under the dressing which makes it extra yummy!

Ingredients:

  • 4-5 boneless chicken breasts {butterfly all the way to make cutlets or thinner slices}
  • 1-1/2 cans store-bought or homemade cream of chicken soup
  • 1 box or bag of store-bought stuffing or use your own bread crumbs {I divided a box between two casseroles}
  • 5 slices swiss cheese

Directions:

  1. Label a piece of foil with the following directions: Thaw 24 hours. Bake covered at 350 for 45 minutes or until chicken is done}
  2. Spread chicken cutlets in a 9×13 dish.
  3. Top with undiluted chicken soup.
  4. Place cheese slices on top. I cut the final slice in half and place one on the top and bottom row.
  5. Top with the bread crumbs

This simple recipe may get your tastebuds ready for Thanksgiving, especially if you serve it with cranberry sauce.

    Yumm! This is so going on our menu plan. I will cut the recipe down since it is just for my husband and I since our toddler won’t eat the chicken, and use my homemade bread crumbs. Very easy and doable for us!
