Stir Fry Vegetables and Brown Fried Rice





God is Good! Our non-profit organization, Cook and Play, fed 25 people at our local homeless shelter for women and children for $3.18 this month.   • 1 large eggplant
  • 2 cups baby carrots, sliced on a diagonal
  • 2 large onions, cut
  • 1 extra large zucchini (you know the kind you might throw away because it got enormous in the garden)
  • 3-4 small squash
  • 2 peppers, sliced
  • 1 bunch green onions
I stir-fry this the same way I prepare my zucchini and onion recipe here.

We served these vegetables stir-fried on a bed of brown fried rice. Just in case you’re wondering, brown fried rice is freezer-friendly. Click here for the recipe.
