Spicy Hawaiian Chicken Sliders {Freezer burgers}

There’s satisfaction when I pull a delicious meal from the freezer knowing I’ve made it myself. I’ll admit I’m becoming a whole foods junkie freezer cook. I love to create mouth-watering meals and throw them in my freezer for time crunch days. Anyone with me?

Here’s a recipe I tried recently and it was just the right size for my kids, not too big, but just the right amount. I tweaked the recipe by Homemade by Holman ┬áto make it more flavorful from the freezer. I recommend grilling outdoors and using fresh pineapple if possible. However, we had to broil ours indoors and use canned pineapple, but the flavor was outstanding.

Ingredients:

  • 1/4 cup low-sodium soy sauce
  • 1 tsp smoked paprika {I used regular, but I’ve added this to my list to buy}
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • 2 pounds ground chicken
  • 12 pineapple rings grilled {fresh preferred or canned}
  • 12 slices pepper jack cheese
  • 6 whole wheat hamburger buns or 12 slider rolls

Directions:

  1. Combine soy sauce, paprika, chili powder and cumin in a stand mixer bowl.
  2. Add chicken and slowly stir just until combined.
  3. Label quart or gallon freezer bags: Hawaiian chicken sliders. Grill or broil until done. Top with pepperjack and pineapple.
  4. Form into 12 slider burgers or 6 full size burgers if desired and stack between sheets of foil or wax paper. Click here for a tutorial.
  5. Freeze and thaw 24 hours when you’re ready to enjoy. Fully grill or broil. Top with cheese and pineapple.
