Quick, grab any produce that needs to be used up and get ready to steam. Add it to your favorite spaghetti or marinara sauce or use our favorite crock pot recipe. I had an acorn squash on hand, given to me by my sister-in-law. I couldn’t stand the thought of forcing my finicky kids to eat it so I steamed it in the microwave and pureed it in the blender. I scooped the entire squash into my recipe and stirred it right in. Sneaky is the word and my lips are sealed when they eat spaghetti, pizza or meatball subs. They are getting a huge dose of vitamins and minerals and don’t know it. I also do this with my sneaky seasoned taco meat.
The key is finely chopping or pureeing if your eater has texture issues or truly want to disguise it. Fresh spinach doesn’t have to be cooked and finely grated carrots or zucchini will cook into a recipe. More nutrition never hurts anyone plus it’s a great way to use up summer produce.
