Lunch Box: Power Foods Burrito

Power foods burrito

 

This is my latest lunch obession: power foods burrito. It’s quick, wholelicious and satisfying. Notice all the power foods, spinach, black beans and avocado. It’s filled with all these yummy ingredients on top of my homemade whole wheat tortilla. I keep my bulk stack of tortillas in my freezer and grab one on demand. I defrost one tortilla and keep the rest in the freezer to keep them fresh. I alternate making whole wheat and spinach tortillas. I layer the following:

  • freezer black beans {thawed the night before in my thawing box}
  • approximately 1 Tablespoon sharp cheddar cheese, grated
  • handful of fresh spinach
  • handful grape tomatoes, quartered
  • avocado, cubed {avocado 101 post}
  • sliced pickled jalepeno slices
  • dash of hot sauce {optional}

What would our power foods burrito consist of?

    • Oh this is so easy to whip up when you have the beans and tortillas in the freezer. They are both so easy and I make them in bulk to have a lot stashed away. I hope you’ll try it. I enjoy your website, I just visited this week from SITS.
