This looks like a bunch of random food on my table, but it’s really a ministry meal for a friend in need. I heard through the grapevine she’d fallen and hit her head on a rock. Tragically, she could not drive, work or sit in front of a computer screen and read (now I’d really be in trouble). Thankfully, she’s back on her feet this week.
When I received this call, I had no need for panic and I didn’t have to run for the border (Taco Bell). I knew I had plenty of food in my freezer to create a nice meal. I included the following in her goody bag: 2 dozen meatballs, pesto freezer focaccia, freezer marinara, freezer banana bread, tossed green salad and Parmesan cheese. I wrote the directions with a sharpie on the focaccia bread bag: Heat meatballs in marinara and broil/toast sliced focaccia. Top with meatballs and sauce and cheese. Enjoy.
Because I freezer cook and prepare a lot of items in bulk, like the bread, meatballs and marinara, I always have extra meals stowed away. I don’t panic or take extra time to make something just for the cause or run by a fast food restaurant.
