Mini Freezer Cooking Menu Plan {I’m Back}

I’m finally back to myself after spending a week in Guatemala doing mission work with my church. I did not expect to be so sick afer returning and today is the first day I’ve felt like myself. I’m finally able to eat produce and believe me, I just ate the biggest peach on the planet and it was divine. I have so much to share and I am still digesting all the work God is doing in Guatemala and my heart as well. I look forward to posting about it in the upcoming week.



I had to do get mini-plan in action so we wouldn’t be eating odds and ends all week, although it’s been nice not cooking and everyone eating mini-meals here and there.

Wed: Chicken noodle soup, sandwiches {It’s been raining a lot here lately}.



Thurs: BLT wraps, pico de gallo and tortilla chips, salad

Friday Cookout with Neighbors: Bringing Ranch Cheddar burgers, Cucumber salad



Saturday Cookout Guatemala Celebration: Bringing Lemon Pie Bars and Black Bean and Corn Salad with chips

Sunday: Black Bean and Corn Quesadillas, salad



I cleaned out my chest freezer today and I’m ready to start filling it up with wholesome foods. It’s going to be an adventurous rest of the week.
