Greek Pepperoni Pasta

I love simple salads and this one is no execption. It comes together with a few simple ingredients on hand and the taste is perfect for a summer picnic. Though it doesn’t contain mayonaise, I still place a bowl of ice under the serving bowl to keep it chilled during a potluck or outdoor event. It tastes better cool and fresh. Enjoy the last days of summer and savor tomatoes and cucumbers while you can.



Serves 8-10 {free free to halve, but it makes perfect leftovers or give some away}

  • 12 oz. whole wheat rotini or penne, cooked and cooled with cold water
  • 1/2 cup homemade or store bought Greek dressing
  • 1/4 cup turkey pepperoni, quartered with kitchen shears
  • 1 can black olives, sliced
  • 1 pint, cherry or grape tomatoes, halved
  • 1 large cucumber, quartered
  • Grated Parmesan cheese to taste, optional

Gently mix all the ingredients reserving the cheese for the top prior to serving.
