Chicken with black bean and corn quesadilla



My favorite 5-minute quesadilla is black bean and corn. My favorite way to stretch chicken, steak, taco meat or pork is adding black beans and corn. This chicken quesadilla comes together in a snap with shredded convenience chicken, which I freeze in bulk and frozen black beans, which I’ve made in the crock pot and frozen in bulk. This is perfect for any meat leftovers if you only have a cup or less, not enough to serve as a main dish. I like to brush our tortillas with butter for flavor and fold over the yummies inside: leftover meat, in this case chicken, black beans, corn, plenty of cheese and homemade pico de gallo or chopped avocado is delish.

    We don’t eat meat, but TVP (textured vegetable protein) is a great way to stretch any ground meat. It comes dehydrated. You just add water and let sit for a few, and flavor however you would meat. I’ve even made Italian ‘sausage’ out of it.

    Yummmy this sounds wonderful… I have got to give this dish a try… I love quesadilla anyway..

    My family loves soft shells so we wrap anything and everything in them.. Manwich, hotdogs etc etc..
