Crock Pot Fudge Brownies

crock pot browniesFinally there’s a new way to bake brownies in the summer without heating up the house. Crock pot brownies still have the same fudgy richness my family loves along with a few nuts on the side for the adults. I’m still wondering why my kiddos don’t love the two mixed. Oh well, more brownies for us if they eat up their side first :)

I create a foil sling inside the crock pot with two sheets. Then I liberally spray with cooking spray. The brownies are so easy to pull out and cut when the toothpick comes out clean. My brownies take 2 hours on high. All crock pots vary so be sure to check it with a toothpick when it’s close to the end time, 15-20 minutes.

Crock Pot Brownies

Ingredients

  • 2/3 cup oil
  • 4 eggs, beaten
  • 2 teaspoons vanilla extract
  • 1-1/2 cups sugar
  • 1-1/4 cup flour lighlty spooned in measuring cup and leveled off  {I use white whole}
  • 3/4 cup cocoa
  • 1/2 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips
  • 1/4-1/2 cup nuts, optional {I just sprinkle some on top}

Instructions

  1. Combine the wet ingredients in a small bowl and mix well.
  2. Combine the dry ingredients in a medium size bowl and whisk well.
  3. Fold the wet ingredients into the dry ingredients and mix until combined.
  4. Create a foil sling with two sheets of foil. Spray liberally with cooking spray.
  5. Spread batter in foil lined crock pot.
  6. Cover and crock on high  up to two hours or until a toothpick inserted two inches away from the sides comes clean.
  7. Cool 10 minutes on a cooling rack before slicing into squares.

  1. What size crockpot do you use? 3.5 qt or 6 qt?

  2. I tried this. Then after 3 hours, I took it out of the slow cooker and put it in the oven. A little over done around the edges, but otherwise pretty good. I think I’ll just stick it in the oven next time and keep an eye on it.

    • Bummer, all crock pots cook differently. I have the Hamilton Beach, 6qt. I hope all the other crock pot recipes work for you. They may need cooking modification.

  3. If I am out of chocolate chips, can I make the crock pot brownie recipe without them?
